Recipe of the Month: Campfire Garlic Steak & Potatoes (Foil Packet Meal)
Ingredients
- 1½ lbs sirloin steak (a favorite cut for foil packet meals)
- 1 lb baby potatoes, cut into ½-inch pieces
- 1 onion, peeled, halved, and thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon minced garlic (or more to taste)
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- Butter, cut into small cubes
There’s nothing better than a hearty, no-mess meal cooked over the fire after a day outdoors. This Campfire Garlic Steak & Potatoes Foil Packet Meal is a campground favorite, easy to prep, easy to cook, and packed with flavor. Whether you’re grilling, cooking over the campfire, or using your RV oven, this recipe is perfect for camping at Volunteer Park & Family Campground or anywhere your adventures take you.
Instructions:
Step 1: Par-Boil the Potatoes (Highly Recommended)
Place the sliced potatoes in a pot of boiling, salted water and cook for 5 minutes. Drain immediately and transfer to a large bowl. Let cool for about 10 minutes, or until easy to handle.
Step 2: Prepare the Foil Packets
- Cut the steak into pieces:
- 2½–3 inches for well done
- 3–4 inches for medium
- 5 inches for rarer steak
- In a large bowl, combine steak, potatoes, onion, olive oil, parsley, garlic, Italian seasoning, salt, and pepper. Toss well.
Step 3: Assemble
Lay out four sheets of aluminum foil (at least 12×12 inches). Evenly divide the steak and potato mixture between the sheets. Top with butter cubes, then fold and seal the foil packets tightly.
Cooking Methods:
Campfire or Grill
Place foil packets on a hot grill or on a 2-inch bed of hot coals. Cook for 8-10 minutes per side, until potatoes are tender. Cooking times may vary depending on heat and steak size.
Oven (RV or Home)
Bake at 425°F for about 20 minutes, or until cooked to your liking. For extra char, open the packets and broil for 1-2 minutes at the end.
