Recipe of the Month: Campfire Garlic Butter Chicken & Potatoes (Foil Packet Meal)
Ingredients
- 2-3 boneless chicken breasts (cubed)
- 3-4 small potatoes (sliced thin)
- 2 tbsp butter
- 1 tsp garlic powder (or fresh minced)
- 1 tsp paprika
- salt & pepper to taste
- Optional: onion slices or green beans
Instructions:
- Lay out heavy duty foil and spray lightly with oil.
- Add chicken and potatoes to the center.
- Season with garlic, paprika, salt, and pepper.
- Add butter on top.
- Seal foil tightly into a packet.
- Cook over campfire coals or grill for 30-40 minutes, flipping once.
Serving Tip:
Open carefully (steam is hot!) and enjoy straight from the foil.
