We are finally into the camping season! We look forward to all the memories being made with us this season. We are excited about our bathrooms being remodeled and can’t wait for you to see them. We still have a great camping recipe for you this month and some fun summer things happening around Knoxville!

Campfire Meatloaf

Servings: 4-6

Ingredients:

Glaze:

  • ½ cup ketchup

  • 3 Tbsp. packed dark brown sugar

  • 2 Tbsp. cider vinegar

  • 1 Tbsp. Worcestershire Sauce

  • 1 tsp. yellow mustard

Meatloaf:

  • 4 oz. cornbread stuffing mix

  • 1 tsp. chili powder

  • ½ tsp. freshly ground black pepper

  • ½ tsp. ground cumin

  • 1 tsp. olive oil

  • 1 small onion, finely chopped

  • ½ bell pepper, finely chopped

  • 3 cloves garlic, minced

  • 1 tsp. fresh thyme

  • 1 lb. ground beef

  • 1 lb. fresh bulk pork sausage, spiciness to taste

  • ½ cup milk

  • 2 eggs, lightly beaten

  • ¼ cup fresh parsley, minced

  • 1 tsp. salt

Instructions:

  • 1. Soak Family Griller Plank in water for one hour. Make sure it’s fully submerged the whole time.

  • 2. At home, mix glaze ingredients. Store in jar in cooler.

  • 3. At home, use food processor to combine stuffing, chili powder, black pepper, and cumin. Process until finely chopped. Store in 1-gallon zipper-top bag.

  • 4. Build a campfire to create a good bed of coals that will deliver at least 450° F, or set up zone fire in grill for both direct and indirect heat zones.

  • 5. Heat olive oil in skillet over medium high heat. Add onion and bell pepper, and cook until onion is soft – about 6-8 minutes – stirring frequently. Add garlic and thyme and cook for 30 seconds.

  • 6. Allow to cool slightly, then add to zipper top bag with stuffing mixture.

  • 7. Also to that bag, add meat, milk, eggs, parsley, and salt.

  • 8. Close the bag and knead carefully until all ingredients are well-mixed.

  • 9. After plank has soaked at least an hour, remove from water and spray one side lightly with cooking spray.

  • 10. Pour meat mixture onto oiled plank and mold into a loaf diagonally on plank.

  • 11. Cover meatloaf and plank with foil so it just laps the edges of plank, but leaves underside exposed to the heat.

  • 12. When campfire or grill is ready, place the plank over direct heat for 2-3 minutes until bottom begins to smolder.

  • 13. Move the plank to indirect heat and cook for 15 minutes.

  • 14. Carefully remove foil and brush meatloaf with glaze. Replace foil and return to indirect heat.

  • 15. Cook for another 45-50 minutes until internal temp reaches 155° F.

  • 16. Remove from grill. Keep foil in place and let rest for 10-12 minutes.

  • 17. Pour or brush on remaining glaze. Garnish with parsley. Slice and serve.

Every month – year-round – brings fresh new exhibits, performances, dining opportunities, and special events. Schedules vary from place to place and are updated the last week of each month.

The thriving arts community is one of the things we love most about Downtown Knoxville. So come take a walk…ride a free trolley…and experience the arts, warmth and community of the neighborhood. Look for the trolley marked ArtWalk! It’s FREE and will take you between Market Square, Gay Street and the Old City.

How to Clean and Flush Your RV Black Tank and Its Sensors in 3 Easy Steps

1. Drain The Tank – Connect your RV sewer hose to the dumping hole and the other end to the tank valve. Open the tank valve and allow the contents to flow into the sewer/septic. It’s highly recommended to dump the black tank first, followed by the gray. The thought process is that the gray water helps to flush away some of the less than desirable black water debris and residue. Keep in mind to dump your black tank when it’s at least halfway full (if not ⅔ of the way full). This allows waste and other solids to float and the liquids to drain properly. If you go to flush the tanks when the black tank is less than half full, be sure to add some extra water first.
2. Remove Debris/Buildup From Tank(s) – As lovely as it would be to merely dump your tanks and drive away, it isn’t quite that simple. When you flush your tanks, you need to perform some basic maintenance as well, including removing any debris or buildup that’s formed in the tanks.
3. Add Enough Water to Cover the Bottom of Your Tanks – Tank flushing ends once you’ve dumped it, removed any debris or build-up, and filled up the bottom with water. This will help to keep your system functioning properly and avoid any damage. Typically, four or five quarts of water will do the trick. Depending on the shape and size of your tanks, you may need to add more or less.
4. Treat Tank (Optional) – A fourth (and optional) step is treating the RV tanks you’ve just flushed. Treating tanks after dumping, flushing, and cleaning helps to prevent future buildup, clogs, odors, as well as accelerate break-down time for future waste stored in the tank.  The black tank should be treated as close to every time you dump it as possible. The gray tank, on the other hand, isn’t necessarily one that needs to treat each time you flush it.
