Recipe of the Month: Taco Soup
Ingredients
- 1 pound ground beef
- 1 yellow onion (chopped)
- 3 tablespoons taco seasoning (1 packet)
- 3 tablespoons ranch dressing mix (1 packet)
- 15 ounces dark kidney beans (drained and rinsed)
- 15 ounces pinto beans (drained and rinsed)
- 14 1/2 ounces tomatoes (canned diced, with chiles)
- 2 cups corn
- 2 cups beef broth
- 28 ounces tomatoes (crushed)
Instructions:
1. Add the ground beef and onion to a large Dutch oven on medium heat and cook until browned, then add in the taco and ranch seasonings and mix well.
2. Add in the kidney beans, pinto beans, diced tomatoes, corn, broth, and crushed tomatoes, mix well.
3. Bring to a boil before reducing to a simmer and cooking for 15 minutes before serving.

Whether you’re a lifelong hockey fan or just looking for something new to do while you’re in town, an Ice Bears game is a fantastic way to spend an evening. You’ll find energetic fans, great food and drinks, and an electric atmosphere that captures the spirit of Knoxville. The team hosts several theme nights and family events throughout the season, from $1 hotdog nights to military and fan appreciation games, making it fun for everyone.
