We hope you had a great summer! We are back with a great simple camping recipe and things to do around Knoxville, TN this month.
A Quick & Easy Taco Soup
Ingredients:
- 1 pound ground beef
- 1 onion diced
- 16 ounces pinto beans drained and rinsed
- 10 ounces Rotel tomatoes
- 8 ounces tomato sauce
- 4 ounces green chile peppers diced
- 2 cups beef broth
- 3/4 cup frozen corn
- 1/3 cup green pepper diced (or 1/2 small green pepper)
- 1 package taco seasoning mix or homemade
Instructions:
- In a large pot, brown ground beef with onion until no pink remains. Drain off any excess fat.
- Add the remaining ingredients to the pot. Bring to a boil, turn down to simmer for 15-20 minutes.

Fairgoers from all over can choose from numerous activities on our fairgrounds including rides, live music, competitions, shows, food, action sports, special events, and so much more! not only are we a place to have fun but also a place to learn.
Reasons You Should Go Camping in the Fall
While summer is the peak season for most campers and RVers, fall might be a better time to hit the road. From mid-September through early November, temperatures are milder, humidity is drying, campgrounds and parks are usually less crowded, fall foliage is ablaze, and pesky bugs like mosquitos and black flies are not as prevalent. Additionally, water temperatures are still warm and fishing conditions improve. So, if you missed out on a summer camping trip this year, no worries. The weeks after Labor Day (the unofficial end of summer) are an excellent time to pitch a tent and park your RV.
